Thankful Thursday - Food, Basketball and Spring!

Goood morning!
If there's one thing I'm thankful for, it's that tomorrow is Friday. Totally cliche Thursday phrase, but you can deal with it. :)

That being said, I'm going with the Thankful Thursday route again this week!

Despite feeling a little bleh lately, there are so many things to be thankful for!

I'm thankful for...

...delicious salads like this! Romaine, apple, chicken, cashews, and BBQ sauce. This was awesome and totally happening again.

While were on the dinner note I have to show you this awesome plate I just made for myself. Trader Joes Teriyaki tofu, TJ's brand wheat thins (obsessed) and some veggies!

My past experiences with tofu have been major fails. (Too bland, too crumbly...) However, I'm happy to say that I LOVED this kind. Trader Joes never disappoints :)

...all the basketball I've gotten to watch the last 4 years. Last night was senior night at Chris's game and it was definitely bittersweet!
I've been watching Chris's games since we were freshman - I used to go to his game at 4 (he played 10th grade and JV then) I'd stay through JV, and then Varsity.. which added up to 5 hours of basketball. Yeah, I was dedicated crazy.

...the impromptu Cherry Berry run with my sisters and momma yesterday. Because sometimes you gotta say yes, too. (See yesterdays post if this didn't make sense)
This is a recycled photo.. this time I went with the cheesecake, italian style tart, and expresso. Toppings included chocolate chips, yogurt chips, m&ms, crumbly granola, crushed graham crackers and butterfinger. Solid.

...the fact that this weekend is my last long run. I have 12 Saturday, 8 the week after that and then my half! I (mostly) love the training and I'm sure the payoff and accomplishment will be well worth all the work, but man oh man could I use a relaxing Saturday.

...March tomorrow! I'm sure I'm not the only one dying for spring. I'm also thankful for the warmer temps. I hope I don't jinx anything, but we haven't gone a day with a high below 20 in probably a week!

...a short post today. yes I have much more to be thankful for but I'm just not feelin' the words so much today.

Everyone have a good one! Get ready for a Monthly Mantra post tomorrow!

  1. Yay to saying yes to froyo! That's always a good thing :)
I am ridiculously excited for you and your half! You're going to rock it! A few months ago you were scared about running 6 or 7 miles and now you're doing DOUBLE that. Look at how far you've come! You're doing amazing and you will feel so proud crossing that finish line.
Amen to short posts. They can't all be thought-provoking and crazy deep. Gotta keep it a little light ;)

  4. I think with tofu the firmer the better. plus take lots of time to marinate it.

  7. I love getting froyo! I gave up desserts for Lent so I haven't had froyo in a while :( As for spring, I cannot wait for the warmer weather and pretty flowers. I am so sick of this snow and gray clouds! I love the Thankful Thursday idea btw!

  10. Yay for tofu! I'm so glad you like tofu.

Is it okay if the toppings always excite me more than the frozen yogurt? Haha!
